
The workshop was conducted online by the Center for Development and Continuing Education at the University of Basra. The objective of the workshop was to reveal the therapeutic importance of vegetable oils, to define their unique compounds, which are considered the basis of antioxidants. The workshop, presented by Dr. Nareman Azheem Al-Ghazi, discussed the most important procedures for improving the bioavailability of oil seeds, the important factors that hinder absorption in the body, and the most effective methods for extracting and refining oil seeds, as well as the impact of different cooking methods on antioxidant molecules. In conclusion, the recommendation was made to specialists to pay attention to the contents of this science because of its benefits to humanity, as well as to focus on the human need for general education about healthy food.
